There is nothing better than an easy homemade pesto pasta recipe with the creamiest most delicious herbed sauce. Pesto is one of my favorite sauces in the world and so incredibly easy to make. Traditionally you make pesto in a mortar and pestle but you can absolutely use a food processor or a blender to make your life even easier. Please use good quality olive oil, I love acropolis organics because it makes all the difference.

Please Note: Traditional pesto is made in a mortar and pestle, but I am using a food processor, traditional pesto is also made with only basil and pine nuts too so you guys can improvise and substitute as much as you like because after all, you are your own boss in your kitchen. If you are allergic to nuts please use hemp hearts. If you are vegan please use 3-4 tablespoons of nutritional yeast or as much as you like. Feel free to make this your own.
2 cups basil
1/2 cup walnuts or pine nuts
1/3 cup olive oil
1 cup grated parm or pecorino
pinch of salt
2-3 garlic cloves
In a food processor, add your basil leaves, garlic, and pine nuts or walnuts and give it a blitz for 20-30 seconds
Now add in your oil, a small pinch of salt, and your fresh parm and blend it for about 30 seconds until you have a nice smooth creamy, and nutty consistency. Always give it a little taste because you can always add a little oil at a time for a smoother consistency. Cook your pasta of choice to al-dente and reserve some of the starchy cooking water. Mix in 4 tablespoons or as much as you like in your pasta and add a splash or two of the pasta cooking water and stir. This will make a very creamy sauce. If you want to reheat this pasta you can always thin it out with some more starchy water. Love you and enjoy.
